Ingredients

Quantity Ingredient
2 tablespoons fresh tarragon, finely chopped
or 3 teaspoons dried tarragon
2 spring onions, finely chopped
1 tablespoon red wine vinegar
125g mushrooms, finely chopped
125ml madeira or dry sherry
125ml cream
60g butter
freshly ground black pepper
salt

Method

  1. In a small pan, cook tarragon, spring onions and vinegar until reduced by half. Add mushrooms and Madeira or sherry and simmer for 5 minutes.
  2. Blend in cream and butter and stir over medium heat for 1 further minute. Season with salt and pepper, and serve.
