This is a type of cornbread. Delicious cut in squares and served warm with butter.

Ingredients

Quantity Ingredient
150g plain flour, sifted
3 teaspoons baking powder
1 teaspoon salt
150g polenta
1 egg, beaten
90g dark molasses
250ml milk
60g butter, melted

Method

  1. Sift flour, baking powder and salt into a bowl. Mix in polenta. Combine egg, molasses and milk, and stir into dry mixture. Blend in melted butter.
  2. Pour into greased 20 cm square tin. Bake in a preheated hot oven for 25–30 minutes. Turn onto a wire rack and cool.
