125g semi-sweet chocolate
440g sugar
2 x 375 g tins evaporated milk
pinch salt
2 tablespoons instant coffee powder
1 teaspoon natural vanilla extract

Method

  1. Melt chocolate in double saucepan over boiling water; stir in sugar. Add evaporated milk and salt. Cover and cook very gently over boiling water for 15–20 minutes. Beat until smooth. Stir in instant coffee and vanilla.
