Ingredients

185g seedless raisins
3 apples, peeled and cored
1/2 orange, including peel
1/2 lemon, including peel
125ml cider vinegar
345g brown sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1 x 20cm * rich shortcrust pastry [rid:4692], baked

Topping

Quantity Ingredient
375ml cream
1 tablespoon icing sugar

Method

  1. Coarsely chop raisins, apples, orange and lemon. Place in an enamel-lined saucepan, add vinegar and heat to boiling point. Reduce heat and simmer for 10 minutes. Add sugar, salt, cinnamon, nutmeg and cloves and simmer for 15 minutes more. Let cool.
  2. Fill pastry shell with cooled mincemeat. Whip cream, sweeten with icing sugar and pile over mincemeat filling.

Note

  • To serve hot, place filled tart in a preheated moderate oven for 15 minutes and hand around whipped cream separately.
