Melon, chicory and grape salad

A fresh combination of textures and flavours with a good minty dressing. Serve as a light first course.

Ingredients

Quantity Ingredient
3 heads witlof
or 2 small cos lettuces
1 small rockmelon
180g grapes

Dressing

Quantity Ingredient
190ml oil
60ml lemon juice
1 1/2 tablespoons fresh mint, finely chopped
1 tablespoon capers
freshly ground black pepper
salt

Method

  1. Cut witlof in quarters lengthways, then cut across in half if large. Treat lettuces the same way. Peel melon, quarter and remove seeds. Cut each quarter into 6 slices. Chill ingredients in refrigerator, then arrange melon alternately with witlof on 6 salad plates. Divide grapes among salads.
  2. To make the dressing, add oil slowly to lemon juice in a small bowl, beating with a fork or whisk. Stir in mint and capers and season with salt and pepper. Dress salads and serve at once.
