Originally created for the great diva Dame Nellie Melba, Melba toast is made with very thin slices of bread. They are baked to golden-brown crispness and make a pleasantly crunchy toast accompaniment – perfect with pâté, and as an accompaniment for creamy soups.

Method

  1. Toast bread slices lightly on each side and cut off crusts. Using a very sharp knife, cut each slice through the middle, producing 2 very thin slices.
  2. Cut each into 4 triangles and place on an ungreased baking tray, soft side up. Bake in a preheated, very slow oven for 15–20 minutes or until crisp and golden.
