Ingredients

Quantity Ingredient
125ml maple syrup
2 egg whites
250ml undiluted evaporated milk, well chilled

Method

  1. Boil syrup to soft-ball stage. Beat egg whites until stiff but not dry. Add syrup slowly, beating constantly, and continue beating until mixture is cool.
  2. Whip milk until thick and fold egg white and syrup mixture into it. Pour into ice cream tray and freeze until firm.

Note

  • If you do not have a sugar thermometer, test syrup by dropping a small quantity into iced water. It should form a ball which will hold its shape.
