Ingredients

Quantity Ingredient
125g semi-sweet chocolate
80ml water
165g sugar
1/8 teaspoon salt
3 egg yolks
1 tablespoon instant coffee powder
1 teaspoon natural vanilla extract
625ml cream, whipped

Method

  1. Put chocolate and water in saucepan. Bring to the boil over low heat, stirring until the chocolate has melted. Add sugar and salt and simmer for 3 minutes, stirring.
  2. Gradually stir into well-beaten egg yolks. Add coffee and cool. Fold in vanilla and cream. Pour into ice cream trays and freeze until firm.
