Ingredients

Quantity Ingredient
3 egg yolks
190ml maple syrup
250ml cream
2 egg whites

Method

  1. Beat egg yolks in top of a double saucepan until light and lemon-coloured. Add maple syrup and 60 ml cream and cook, stirring constantly, over hot water until thick. Cool. Beat egg whites until stiff but not dry. Fold into custard mixture. Pour into ice cream tray and freeze until mushy.
  2. Remove to a bowl and beat with a rotary beater until smooth but not completely thawed. Whip remaining cream until stiff and fold into partially frozen mixture. Return ice cream to tray and freeze until firm.
