Eggs Benedict was invented at Brennan’s Restaurant in New Orleans, USA, as part of the famous ‘Breakfast at Brennan’s’, a leisurely feast which may last most of the day.

Ingredients

Quantity Ingredient
4 slices ham
2 english muffins
butter
4 eggs
1 quantity * hollandaise sauce [rid:8971]

Method

  1. Trim ham slices to fit muffins. Fry ham in a little butter until lightly browned. Keep warm. Split and toast muffins.
  2. Poach eggs. Butter muffins lightly and place 2 halves each on 2 heated plates. Top each muffin half with a slice of ham, then with a hot poached egg and lastly with Hollandaise sauce. Serve immediately.
