6 chicken pieces
or 2 x 500g whole chickens, split in half
60g butter
1 tablespoon oil
2-3 tablespoons dijon mustard
2 tablespoons spring onions, chopped
1/4 teaspoon dried thyme
freshly ground black pepper
pinch cayenne
salt

Method

  1. Arrange chicken pieces on grill rack, skin side up. Melt butter in a small pan, add oil and brush chicken pieces with some of this mixture.
  2. Grill chicken under a preheated grill for 10 minutes on each side, brushing or basting frequently with butter and oil.
  3. Blend mustard with spring onions, thyme, salt, pepper and cayenne and slowly add remaining oil and butter mixture, drop by drop, to thicken it.
  4. Turn chicken skin side up again, and spread with some of the mustard mixture. Grill for a further 10 minutes, reducing heat if necessary, until chicken is golden brown and tender, basting with mustard mixture from time to time. Small chicken pieces will take less time to cook, 15–20 minutes altogether, so time accordingly.
