Ingredients

Quantity Ingredient
500g finely minced steak
1 onion, finely chopped
1-2 chillies, seeded and chopped
2 tablespoons fresh coriander or mint, chopped
1-2 garlic cloves, crushed
1/2 teaspoon salt
1 tablespoon Garam masala
1 teaspoon chilli powder
plain flour
oil, for frying

Sauce

Quantity Ingredient
30g butter or ghee
1 large onion, finely chopped
1 tablespoon fresh ginger, chopped
1 teaspoon turmeric
1/4 teaspoon salt
2 teaspoons garam masala
1/4 teaspoon chilli powder
2 large tomatoes, peeled and chopped
1 tablespoon lemon juice
125ml water

Method

  1. Mix steak with onion, chillies, coriander or mint, garlic, salt, garam masala and chilli powder. Knead mixture until stiff and smooth. Roll into walnut-size balls and dust lightly with flour. Shallow-fry in hot oil until golden on all sides. Drain on crumpled paper towels.
  2. To make sauce, heat butter or ghee in a heavy saucepan and fry onion and ginger until softened. Add turmeric, salt, garam masala and chilli powder and stir for 1 minute, then add tomatoes. Cook, stirring, for a few minutes. Stir in lemon juice and water.
  3. Add meatballs and stir to coat with sauce. Cover and simmer for 15–20 minutes or until sauce is thick. Serve with rice, a choice of chutneys and sambals such as minted chopped tomatoes, sliced bananas, coconut and pappadams.
