A good spur-of-the-moment snack if you have muffins in the freezer. These are splendid for picnics, too – wrap in foil then in a dish towel to keep them warm.

Ingredients

Quantity Ingredient
6 english muffins, white or wholemeal
3 rashers bacon, rind removed, chopped
125ml milk
185g swiss or other mild cheese, grated
freshly ground black pepper
dash worcestershire sauce
butter, melted

Method

  1. Split muffins in half and pull out some of the crumbs. Fry bacon crisp in frying pan. Remove the pan from the heat and stir in crumbs, milk, cheese, pepper and Worcestershire sauce.
  2. Fill muffins with the mixture, press halves together and secure with wooden toothpicks. Brush tops with melted butter and bake in a preheated moderate oven for 15 minutes. Remove toothpicks and serve warm.
