This simple marinade gives a marvellous flavour to sea scallops, and is also good with raw prawns.

Ingredients

Quantity Ingredient
750g fresh scallops
125ml dry vermouth
125ml olive oil
1 garlic clove, crushed
2 tablespoons parsley, chopped

Method

  1. Remove any brown bits from scallops, then place in a bowl. Add remaining ingredients and turn gently to mix. Marinate, covered, for several hours in refrigerator. Drain scallops, reserving marinade.
  2. Thread scallops onto 4 large or 8 small skewers and grill under preheated grill for 5–6 minutes, turning occasionally and brushing with marinade. Serve with fluffy boiled rice or crusty bread.
