Barramundi with macadamias

Snapper steaks, whiting fillets or other fine white fish can be substituted for barramundi.

Ingredients

Quantity Ingredient
2 tablespoons lemon juice
4 barramundi or other white fish steaks or fillets
4 tablespoons ghee or butter
2 tablespoons spring onions, finely chopped
3 tablespoons macadamia nuts, chopped
freshly ground black pepper
parsley, to garnish
lemon wedges, to garnish

Method

  1. Brush lemon juice over fish and set aside for 10 minutes. Brush fish with 2 tablespoons ghee or melted butter and grill. When cooked, place on a serving plate.
  2. Meanwhile, heat remaining ghee or butter in a small pan and gently fry spring onions and nuts until golden. Pour over fish, season with pepper and serve garnished with lemon wedges and parsley.
