Baked mushrooms with ham

A good weekend lunch dish, served with a crisp salad.

Ingredients

Quantity Ingredient
250g mushrooms
60g butter
salt and freshly ground black pepper
125g ham, finely chopped
60g sour cream
2 teaspoons lemon juice
4 spring onions, finely chopped
black olives, stuffed or pitted, to garnish

Method

  1. Trim mushroom stems level with caps and chop stems finely. Lightly sauté mushroom caps in butter. Remove to a buttered baking dish just large enough to hold them in one layer and season with salt and pepper.
  2. In the same pan, fry chopped mushroom stems until soft. Remove from heat and stir in ham, sour cream, lemon juice and spring onions. Season with salt and pepper. Fill caps with mixture and bake in a preheated moderately hot oven for 10 minutes. Garnish with olives to serve.
