Serve with crusty bread, to mop up the lovely garlic butter.

Ingredients

Quantity Ingredient
1 teaspoon oil
1.5kg mussels, scrubbed and cleaned
60g butter
2 tablespoons parsley, chopped
2 garlic cloves, finely chopped

Method

  1. Rub a large baking dish with oil and place mussels in it in a single layer. Bake in a preheated very hot oven for 5–10 minutes or until the shells open. Discard any mussels that do not open. Do not overcook.
  2. Remove upper shell. Melt butter and stir in parsley and garlic. Serve mussels on the lower shell with a little of the butter spooned over and any liquid from the pan.
