Nutbread with lime butter

An unusual tea-time combination.

Ingredients

Quantity Ingredient
375g plain flour
1 tablespoon baking powder
1/2 teaspoon salt
125g walnuts, chopped
60g butter
165g brown sugar
1 egg
190ml milk, plus 2 tablespoons extra

Lime butter

Quantity Ingredient
60g butter
1 lime, zested
1 tablespoon lime juice
salt

Method

  1. Sift flour with baking powder and salt, then add walnuts. Cream butter with sugar until light and fluffy, then beat in egg and milk. Fold in flour mixture 1 cup at a time. Allow to stand, covered with plastic wrap, for 40 minutes.
  2. Spoon into a buttered 21 × 11 cm loaf tin that has been lined on the bottom and long sides with greased baking paper. Bake in a preheated moderate oven for 1 hour 10 minutes or until a skewer inserted in centre comes out clean. Cool in tin for 15 minutes before turning out onto a wire rack.
  3. To make lime butter, cream butter with lime zest and juice. Add salt to taste and serve with sliced nutbread.
