1kg boneless lean pork, cut into 2.5 cm cubes
2 tablespoons plain flour
60ml oil
1 tablespoon fresh ginger, grated
2 onions, sliced
100g tomatoes, peeled and chopped
2 tablespoons parsley, chopped
125ml lemon juice
500ml chicken stock
few drops tabasco sauce
2 tablespoons * mayonnaise [rid:4557]
parsley, chopped, to garnish
lemon wedges, to garnish

Method

  1. Sprinkle pork cubes with flour. Heat oil in a heavy pan and add pork and ginger. Cook over medium heat until pork is brown. Add onions, tomatoes and parsley, cook for a few minutes longer and add lemon juice, stock and Tabasco.
  2. Reduce heat and simmer very gently, uncovered, for about 1 hour or until pork is tender and stock reduced. Just before serving stir in mayonnaise. Garnish with lemon wedges and chopped parsley and serve with boiled new potatoes.
