Grilled lemon chicken

An excellent way with chicken and one that weight-watchers will appreciate.

Ingredients

Quantity Ingredient
1 large lemon, juiced
1 small onion, grated
1-2 garlic cloves, crushed with pinch salt, (optional)
freshly ground black pepper
4 chicken pieces, breasts or legs
1-2 tablespoons oil
1 lemon, sliced wafer-thin

Method

  1. Combine lemon juice, onion, garlic, if using, and pepper. Marinate chicken pieces in this mixture for at least 1 hour, turning several times.
  2. Brush grill rack with oil and add chicken pieces, skin side down. Cook under a preheated grill for about 10 minutes, then turn over and arrange slices of lemon on top. Continue to grill for a further 7 minutes or until chicken is cooked.

Note

  • If cooking boneless, skinless chicken breasts for weight-watchers, place the chicken on sheet of foil smeared with oil. Protect with lemon slices and grill without turning for about 10 minutes.
