Rich chocolate icing

Ingredients

Quantity Ingredient
185g dark chocolate, roughly chopped
60ml dark rum
1/2 teaspoon natural vanilla extract
250g icing sugar, sifted
30g butter, softened
1 tablespoon milk, hot

Method

  1. Melt chocolate in a heatproof bowl set over simmering water. Stir in rum and vanilla. Add icing sugar, butter and milk. Stir vigorously over the hot water until icing is smooth and glossy. If too thick, add a little more milk. Spread at once over cake. Sufficient to cover top of a 23 cm square cake.
