Baked ginger ham with sweet potato

Ingredients

Quantity Ingredient
1 small sweet potato, peeled and thickly sliced
2 ham steaks
1 teaspoon butter
1 teaspoon brown sugar
1/4 teaspoon ground ginger
60ml fruit juice

Method

  1. Cook sweet potato in lightly salted boiling water for about 10 minutes or until tender. Drain well.
  2. Place ham steaks in a flat casserole or pie dish and arrange sweet potato slices around them. Mix together butter, brown sugar and ginger, and spread over ham. Pour fruit juice around ham.
  3. Bake in a preheated hot oven (200°C) for 15 minutes, basting several times with juice. Serve with a green salad.
