Savoury galettes made with vegetables, shaped into rounds, and served hot or cold cut into wedges are delicious.

This is a beautifully crisp, golden-brown potato cake. Serve hot or cold.

Ingredients

Quantity Ingredient
500g potatoes, cooked
30g butter
1 onion, chopped
2 eggs, beaten
60ml hot milk
freshly ground black pepper
1/4 teaspoon nutmeg
salt

Method

  1. Mash potatoes well, then push through a sieve.
  2. Melt butter in a saucepan and soften onions over low heat. Remove from heat and beat in potatoes, eggs, hot milk, salt, pepper and nutmeg.
  3. Turn into a greased 20 cm sandwich tin. Smooth top with a spatula and bake in a preheated moderate oven (180°C) for 1 hour. Turn out cake and serve cut into wedges.
