Ingredients

Quantity Ingredient
3 x 8 cm sticks cinnamon
2 teaspoons cardamom seeds
1 teaspoon cloves
1/2 nutmeg, grated

Method

  1. Over medium heat in a small pan roast separately first cinnamon, then cardamom, then cloves.
  2. Remove each spice from the pan when it begins to smell fragrant and cool on a plate. When all are roasted and cooled, blend to a fine powder in a blender or pound using a mortar and pestle.
  3. Finally, add nutmeg and store in airtight jar in refrigerator. Best used within 2 weeks.
