Soaking prawns in water with bicarbonate of soda gives the prawn meat a clear colour – thus the name.

Ingredients

Quantity Ingredient
1 1/2 tablespoons bicarbonate of soda
560ml water
500g green king prawns, shelled and de-veined
1 1/2 tablespoons cornflour
1/2 teaspoon salt
1/2 teaspoon sugar
2 tablespoons fresh ginger, shredded
2 tablespoons red pepper, shredded
15g spring onions, sliced

Method

  1. Dissolve bicarbonate of soda in 500 ml water, add prawns and soak for 2 hours. Drain and rinse well under cold running water, then soak again in fresh cold water to cover for a further 1 hour. Drain. Blanch in boiling water for 2 minutes, drain well and dry.
  2. Combine remaining 60 ml water, the cornflour, salt and sugar and heat in a wok or frying pan, stirring, until boiling. Add prawns and toss until well coated and heated through. Place ginger and vegetables on a heated serving platter, spoon prawns on top and toss through.
