3 tablespoons soy sauce
1 tablespoon honey
2.5 cm piece fresh ginger, grated
or 1/2 teaspoon ground ginger
3 garlic cloves, crushed
1 1/2 teaspoons five-spice powder
1.5kg whole roasting chicken
3 tablespoons salt

Method

  1. Combine soy sauce, honey, ginger, garlic and 1/2 teaspoon five-spice powder, and rub over chicken and in cavity. Cover and refrigerate for 1–2 hours, turning occasionally.
  2. Drain chicken, reserving marinade. Put on a rack in roasting tin containing a little water (to prevent drippings from burning). Roast in a preheated moderate oven (180°C) for 1¼ hours, brushing 3 or 4 times with reserved marinade and turning chicken occasionally.
  3. Chop the chicken through skin and bones into bite-size pieces. Arrange on a heated serving dish. Serve remaining five-spice powder mixed with salt for dipping.
