Rice flavoured with white wine, spices and currants is an elegant accompaniment to grilled meat or fish.

Ingredients

Quantity Ingredient
280g long-grain rice
750ml boiling water
75g currants
60g butter
250ml riesling or other dry white wine
2 teaspoons salt
1/4 teaspoons freshly ground white pepper
1/4 teaspoon nutmeg
1/4 teaspoon ground allspice
1 teaspoon sugar

Method

  1. Wash rice under cold running water and drain well. Pour 250 ml boiling water over currants and soak for 10 minutes, then drain and set aside.
  2. Melt butter in a large saucepan, add rice and stir over medium heat for 5 minutes. Add rest of boiling water and remaining ingredients except currants. Boil until liquid is absorbed and steam holes appear in rice. Turn heat very low, cover tightly and steam for 10 minutes or until rice is just tender. Remove from heat, stir in currants.
