Ingredients

230g dried figs, chopped
90g raisins
240g dates, chopped
55g preserved ginger, drained and chopped
2-3 tablespoons brandy or rum
240g fresh breadcrumbs
300g self-raising flour
125g suet, shredded
pinch salt
3 eggs
1 lemon, zested and juiced
60ml milk

Method

  1. Combine figs, raisins, dates and ginger. Sprinkle with brandy or rum, cover and set aside for 1 hour.
  2. Mix together breadcrumbs, flour, suet and salt. Beat eggs to a froth and mix into dry ingredients with lemon zest and juice and prepared fruit. Mix thoroughly, adding milk to bring mixture to dropping consistency.
  3. Spoon mixture into greased 1.25 litre pudding basin, cover with 2 thicknesses buttered baking paper and tie securely with string. Place in a large saucepan with enough water to come halfway up side of basin. Cover and steam for 4 hours. Serve in wedges with cream or custard.
