Ingredients

125g dates, chopped
40g raisins
2 oranges, zested and juiced
250g rolled oats
40g plain flour
185g butter
75g sugar

Method

  1. Combine dates and raisins in a saucepan. Make up orange juice to 250 ml liquid with water. Add liquid to dates and raisins and cook gently until fruit is a thick pulp, then allow to cool.
  2. Mix rolled oats and flour, rub in butter and add sugar and orange zest. Press half the mixture into a greased 28 × 19 cm lamington tin. Spread with fruit filling, top with rest of oat mixture and press down lightly.
  3. Bake in a preheated moderately hot oven for 45 minutes. Serve warm as a dessert, or cold as a biscuit bar for tea.
