Crisp fritter batter

Use for fish fillets.

Ingredients

Quantity Ingredient
150g plain flour
pinch salt
1 whole egg
1 egg, separated
60g butter or margarine, melted
250ml beer or soda water

Method

  1. Sift flour with salt into a bowl and make a well in centre. Beat 1 whole egg and 1 egg yolk (keep second white for later) and pour into well with melted butter or margarine.
  2. Stir, incorporating flour gradually and adding beer or soda water little by little, until mixture is smooth. Cover and stand for 1 hour. Just before using, whisk remaining egg white to a firm snow and fold into batter.
