Cooked lamb, beef, veal or chicken meat chopped and fried in fritter batter makes a delicious meal, accompanied by a crisp salad.

Ingredients

Quantity Ingredient
400g meat, cooked and chopped
1 tablespoon onion, finely chopped
salt and freshly ground black pepper
1 quantity * basic fritter batter [rid:8638]
oil and butter, for shallow-frying

Method

  1. Combine meat and onion, season with salt and pepper and fold into batter. Heat oil and butter in a frying pan.
  2. Drop meat mixture in large tablespoonfuls into hot fat and fry on both sides until golden and crisp. Drain on crumpled paper towels. Serve hot.
