Ingredients

440g short-grain rice
salt
750g cooking apples, peeled, cored and thinly sliced
500ml milk
1 lemon, zested
75g sugar
pinch cinnamon
125ml sherry
120g raisins, chopped

Method

  1. Add rice to a pan of salted boiling water. Boil for 3 minutes, then drain off the water. Add apples, milk and lemon zest to rice and cook until tender. Remove lemon zest. Add sugar, cinnamon, sherry and raisins and mix well. Cook for 3–4 minutes longer. Serve with cream.
