Ingredients

Quantity Ingredient
35g self-raising flour
1/4 teaspoon salt
110g sugar
2 eggs, separated
125ml milk
1 tablespoon lemon juice
65g crushed pineapple, drained
60ml pineapple juice

Method

  1. Sift flour, salt and sugar into a bowl. Beat egg yolks and add to the flour mixture with milk, lemon juice and crushed pineapple and juice, and mix well. Fold in stiffly beaten egg whites.
  2. Pour into an ovenproof dish and stand the dish in a roasting tin of water. Bake in a preheated moderate oven for about 40–45 minutes or until set. Serve with cream or ice cream.
