Ingredients

Quantity Ingredient
6 firm ripe pears
1/2 lemon, juiced
500ml water
250ml port wine
275g sugar
1 cinnamon stick
1/2 orange, zested
strip lemon peel

Method

  1. Peel pears and drop them into a bowl of cold water, with lemon juice added. This will keep them from darkening.
  2. Combine the 500 ml water with remaining ingredients in a saucepan and bring to the boil, stirring until sugar has dissolved. Add drained pears and simmer until fruit is tender. Do not overcook. Let pears cool in the syrup, then chill before serving.
