Ingredients

Quantity Ingredient
1 honeydew melon
1 rockmelon
2-3 pieces preserved ginger, chopped
2 teaspoons ginger syrup
250ml water
125ml white wine or dry sherry
165g sugar

Method

  1. Halve melons, remove seeds and scoop out flesh in dessertspoon-size pieces. Put melon into earthenware basin with preserved ginger and ginger syrup.
  2. Make a syrup by simmering together water, wine or sherry and sugar. Pour boiling syrup over melon. Cool and chill well before serving.
