These nutty, economical fruit bars stay moist for weeks. Make them 2–3 weeks ahead if liked, but don’t roll in the icing sugar until you serve them.

Ingredients

Quantity Ingredient
190ml evaporated milk
160g dates, chopped
150g self-raising flour
1/2 teaspoon salt
125g butter
115g caster sugar
1 egg, beaten
1 teaspoon natural vanilla extract
60g walnuts, chopped
icing sugar, sifted

Method

  1. Place evaporated milk in a small saucepan and heat until small bubbles appear at edge of saucepan. Pour over dates in a bowl and allow to cool.
  2. Sift flour and salt together. Cream butter with sugar until light and fluffy. Add egg and vanilla and beat well. Fold in sifted flour alternately with milk and date mixture. Stir in nuts.
  3. Spoon mixture into a greased 23 cm square cake tin. Bake in a preheated moderate oven for 30–35 minutes or until a skewer inserted into the centre comes out clean. Turn out and cool on a wire rack. Cut into bars and toss in icing sugar.
