Ingredients

250g dates, pitted
250ml water, boiling
90g butter, softened
220g sugar
1 teaspoon natural vanilla extract
1 egg, beaten
225g self-raising flour
1 teaspoon bicarbonate of soda
1 teaspoon cinnamon
1/4 teaspoon salt
60g walnuts, chopped

Method

  1. Place dates in a large bowl and pour boiling water over. Leave for 2–3 minutes or until they soften.
  2. Add butter and sugar and beat well until combined. Blend in vanilla and egg.
  3. Sift flour with bicarbonate of soda, and fold in with cinnamon and salt. Stir in the nuts.
  4. Turn into a greased and lined 21 × 11 cm loaf tin or a 20 cm round or square cake tin. Bake in a preheated moderate oven for 25–30 minutes or until a skewer inserted into the centre comes out clean. Leave in the tin for 2 minutes, then turn onto a wire rack to cool. Serve warm as a dessert accompanied by whipped cream, or store in an airtight container ready to eat on its own or sliced and buttered.
