Ingredients

Quantity Ingredient
185g berries, fresh or frozen and thawed
110g sugar
3 teaspoons powdered gelatine
6 tablespoons water
1 tablespoon lemon juice
170ml cream, whipped

Method

  1. Crush berries and add sugar. Leave to stand for 30 minutes.
  2. Meanwhile, soften gelatine in water, then place over simmering water until dissolved. Stir into berries. Add lemon juice and refrigerate until thickened slightly. Lightly fold in whipped cream and pour into a bowl. Chill until firm. Unmould and serve.
