Quantity Ingredient
6 bananas, cut in half lengthways
125ml orange juice
1 tablespoon lemon juice
55g brown sugar
1/8 teaspoon salt
60g butter
90g desiccated coconut
or 90g fresh coconut, grated

Method

  1. Place bananas in a buttered casserole. Combine orange and lemon juices, sugar and salt and pour over bananas. Dot with butter.
  2. Bake in a preheated hot oven for 10–15 minutes. Sprinkle bananas with coconut and serve immediately.
