Ingredients

Quantity Ingredient
1 tablespoon powdered gelatine
2 tablespoons water
190ml orange juice
60ml sherry
410g tinned evaporated milk, chilled
110g sugar

Method

  1. Soften gelatine in water, then place over simmering water until dissolved. Remove from heat, add orange juice and sherry and mix together. Beat milk with sugar for a few minutes, then add orange mixture and beat until thick and fluffy. Place in serving bowl and chill until set.
