1 small red cabbage, shredded
90g butter
1 large onion, finely chopped
2 large cooking apples, cored and thinly sliced
pinch caraway seeds
2 tablespoons honey
2 tablespoons vinegar
salt and freshly ground black pepper

Method

  1. Soak cabbage in cold water to cover for 15 minutes. Heat butter in a wide heavy saucepan or deep frying pan and fry onion gently until soft. Lift cabbage from water with hands, leaving it moist, and add to pan with remaining ingredients. Stir to combine, then cover and simmer very gently for 1½ hours. By this time, cabbage should be very tender and all liquid absorbed. (If necessary, add a little boiling water during cooking to prevent cabbage from sticking.) Adjust seasoning, and spoon into a heated serving dish. Excellent with roast pork, duck, venison or any game.
