Spiced chicken wings with chickpeas

Ingredients

1kg chicken wings, tips removed
salt
1/2 teaspoon ground ginger
125ml oil
2 large onions, finely chopped
2 garlic cloves, crushed
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon cinnamon
pinch cayenne
500ml chicken stock
freshly ground black pepper
530g tinned chickpeas, drained

Method

  1. Sprinkle wings with salt and ginger. Heat oil in a large frying pan and brown wings over moderately high heat. Transfer to a casserole dish.
  2. Add onions and garlic to frying pan and cook until onions soften. Stir in spices and cook for 1 minute, then add chicken stock, salt and pepper.
  3. Arrange drained chickpeas over chicken wings and pour stock mixture over. Cover and cook in a preheated moderate oven for 25 minutes. Remove lid and bake for 5 minutes longer. Serve with plenty of crusty bread and a salad.
