Ingredients

Quantity Ingredient
1/2 lemon, juiced
500g button mushrooms, quartered or left whole
1 tablespoon coriander seeds
4 tablespoons olive oil
2 bay leaves
salt
freshly ground black pepper

Method

  1. Squeeze lemon juice over mushrooms. Crush coriander lightly in a mortar or use end of a rolling pin.
  2. Heat olive oil in a heavy frying pan, add coriander seeds and cook for 10–15 seconds. Add mushrooms, bay leaves, salt and pepper. Cook for 3–4 minutes, tossing mushrooms to cook lightly. Cool. Remove bay leaves and serve in individual bowls with crusty French bread to mop up juices.
