Ingredients

1 tablespoon white vinegar
250ml evaporated milk
225g plain flour
pinch salt
60g cocoa powder
1 1/2 teaspoons bicarbonate of soda
285g caster sugar
155g butter, melted
1 teaspoon natural vanilla extract
2 eggs
raspberry jam or whipped cream
Rich chocolate icing, to finish
or icing sugar, sifted, to finish

Method

  1. Mix vinegar with evaporated milk. Sift flour, salt, cocoa, bicarbonate of soda and sugar into a bowl. Add butter and dry ingredients with soured milk, vanilla and eggs. Beat vigorously for about 2 minutes or until smooth.
  2. Pour into 2 greased and bottom-lined 20 cm sandwich tins. Bake in a preheated moderate oven for 30–35 minutes or until a skewer inserted in centre comes out clean. Cool on a wire rack. Sandwich together with raspberry jam or whipped cream and ice with chocolate icing or dust with icing sugar.
