Ingredients

1 green cucumber, lightly peeled and finely sliced
salt
1 tablespoon wine vinegar
2 teaspoons sugar
3 tablespoons olive oil
1 tablespoon fresh dill or mint, chopped
freshly ground black pepper
60g cream cheese, at room temperature
3 tablespoons sour cream
1 tablespoon lemon juice
1 small garlic clove, crushed
sprigs fresh dill or mint, to garnish

Method

  1. Sprinkle cucumber with salt and leave to drain in a colander for 20 minutes. Place vinegar, sugar, oil and chopped herbs in a screwtop jar and shake until emulsified. Season with salt and pepper.
  2. Beat cream cheese until soft, then gradually beat in sour cream, lemon juice, garlic, salt and pepper. Rinse cucumber and dry well. Toss with oil and vinegar dressing, and divide evenly among 4 individual serving plates. Spoon cream cheese mixture on top and garnish with a sprig of dill or mint.
