Encyclopedia of Food and Cookery

A tart fruit cultivated in North America and used in jellies, tarts, poultry glazes and pies. Cranberry sauce is a thick fruity sauce, the traditional accompaniment for roast turkey at Christmas and, in the US, at Thanksgiving feasts. You can buy it ready-made from good food stores.

Dried cranberries are nibbled as for other dried fruit, added to salads or used in baking.
