pinch salt
2 egg whites
230g caster sugar
1 teaspoon natural vanilla extract
135g desiccated coconut

Method

  1. Add the salt to the egg whites and whisk until stiff. Fold in the sugar, vanilla and coconut using a metal spoon.
  2. Pile in small pyramids on a baking tray lined with buttered foil or rice paper and press into neat shapes. Bake in a preheated cool oven for 45 minutes or until a pale fawn colour. Cool on trays.
