Cinnamon tea cake

Ingredients

1 egg, separated
110g sugar
125ml milk
1/2 teaspoon natural vanilla extract
150g self-raising flour, sifted
30g butter, melted
butter, for brushing
1/2 teaspoon cinnamon, for topping
1 tablespoon sugar, for topping

Method

  1. Beat egg white until stiff. Add egg yolk, and gradually beat in sugar, beating well after additions. Mix milk and vanilla, and add a little at a time.
  2. Gently stir in flour and melted butter. Pour into a greased 18 cm sandwich tin. Bake in a preheated moderately hot oven 190°C for 20–25 minutes. While still hot, brush with melted butter and sprinkle with a mixture of sugar and cinnamon. Serve warm or cold with butter.
