Chutney is the standard accompaniment to curried dishes. It may be made from a mixture of chopped fruits, spices, acids and sugar, cooked slowly until thick, while some chutneys are a combination of fresh fruits, chopped, seasoned and served uncooked. Chutney can also be served with cold meat or cheese, or as a sandwich filling.

Ingredients

Quantity Ingredient
3 chokos, peeled, seeded and chopped
3 large cooking apples, peeled, cored and chopped
3 onions, chopped
220g sugar
2 garlic cloves, chopped
2 teaspoons ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon cayenne
830ml white vinegar
175g treacle
3 teaspoons salt

Method

  1. Combine ingredients in an enamel-lined saucepan and simmer for about 1 hour or until mixture is thick. Spoon into hot sterilised jars. Cool and seal.
