Ingredients

Quantity Ingredient
125g dark chocolate, broken up
2 teaspoons instant coffee powder, dissolved in 1 tablespoon hot water
4 eggs, separated
2 teaspoons rum or brandy
cream, to serve

Method

  1. Place chocolate and coffee in a small heatproof bowl over hot water and stir until chocolate is smooth and melted. Remove from heat and blend in egg yolks one at a time, stirring until thoroughly combined. Beat egg whites until stiff and gently fold into chocolate mixture with rum or brandy.
  2. Spoon into 6 mousse pots and chill for 4 hours or overnight. Serve with pouring or whipped cream, or pipe a swirl of whipped cream on top and finish off with chocolate curls or caraque or glacé violets.
